Good stuff!

I put the rest of filets in the fridge for my wife & kids for when they get home tomorrow.

Jesus, 5 min a side! You might as well make jerky :smash:

If it's really fresh just sear it quickly over really high heat. Otherwise a few min a side is usually enough. Tuna cooks very quickly.

You're right Spence. I peek a lot and I don't cook on high, usually. If I had the willpower, i'd leave it alone

A little lemon juice on each side, some dill, grill 2 minutes each side or till it turns grey, delicious.

make a wet rub:

couple (or 3 :-) tablespoons Emiril's Southwest spice
couple of tablespoons Malt Vinegar
few tabkespoons of oil (I like corn oil)

Soak Tuna for 45 minutes or so

Wave it at the grill for a minute or 2

Serve with a bottle of '99 Rancho Zabaco Zin (2001 isn't bad either)

P.S. Take the wet rub that you soaked tuna in and baste it on some zucchini, potabello mushroom, and vidalias. Grill these slightly longer than the tuna (but not much)

you COOK tuna?

damn.

Seriously, salt and pepper the steak. Cook for about two minutes on high on the grill and about 45 seconds on the other.

Make a sauce with a little orange juice and teriyaki marinade (not the thick stuff.) add some powdered ginger, finish with butter and a bit of chopped cilantro. YUM!
