Has anyone heard of Gorilla Glue, if so do you think it could replace epoxy as a final coat. It is much easier to work with?

Gorilla glue is a poly-urethane glue and not meant for finishing. It is good for gap filling but it isn't even clear. It makes a good wood glue but kinda messy and hard to clean up once it dries.
Use epoxy.
