How do you intend to go after them? Boat or shore? What type of set up? Do you like bait, etc....

The most popular way to fish Monomoy during the day light hours, which is the only time the shuttle boats run (8-4:30), is using the flyrod. A lot of small bait, mostly sand eels, makes it a good place for the flyrod. Most of the water around Monomoy is gin clear and if you are fishing the west side flats the fish can be spooky and tight lipped. Thus you need to use floro carbon leaders preferably tied direct, no snaps, and 20lbs is about the most I ever use there. As far as rubber the Sluggo is king since it looks a lot like a sand eel. Either the 4 or 6 inch weighted or unweighted depending on the water depth. Shallow channels I use 3/8th oz jig heads and sight casting in real shallow you can go weightless. Fishing the deeper ocean side beaches on the south island you can use 3/4oz kalin jig heads. One other method you could consider is if you can find a shop selling fresh sand eels they are great to have. Frozen is not good because they don't stay on the hook when they thaw out. You can use just a hook in the areas that are 3 feet or less. If the sandeels are small put two on a hook so the fish sees a belly no matter which side lands up. You hook them threw the eyes. This will require a small cooler of some kind to keep them fresh. You should pack light when hiking Monomoy bringing only the bare necessities including water, sunblock and granola bars or some other snacks.
