I noticed this the other day and figured you guys would know..
you never see a Captain on the Deadliest Catch actually using a steering wheel, it doesn't even look like there is even one in front of them in the capatain's chair they all sit in.
I assume it's all done elecronically (like autopilot) and they just adjust the throttle as needed, you always see their hand on the throttle?

Joystick & auto pilot.
Most commercial guys run/steer with autopilot

used what we called a jog lever(joy stick), turns rudder port or starboard and returns to center.

pretty much everything big has a joystick now.
every 270ft cg cutter i've been on has just a joystick, along with flight 2 ticonderogas
