It sure is the truth. ...I'm a lucky man! Adamfishes 05-25-2003, 09:16 AM 8-13 mins but 20 and you will definitly burn it. I eat em alive. capesams 05-25-2003, 03:10 PM I buy mine already cooked:p NEXT2NUN 05-25-2003, 04:27 PM When it's red it's dead!! ragfly 05-25-2003, 06:17 PM When you can snap the antennas, if they only bend they are not done. It really works. I learned it from my father in-law. A retired lobster fisherman. Jenn 05-25-2003, 06:58 PM actually RickB I found it funny.....I always get razzed when cooking lobster....I NEVER time it! I let the water boil of course throw it in and check every now and then....I pull the tail fins back and check the underside of the tail nearest to the body....when it has that "certain look" to it I pull it out! Cant really explain it....but it hasnt failed me yet! Good N You 05-27-2003, 11:50 AM If you can steam it with salt water (From the ocean) then it will taste much better. Be careful not to burn all the water off though. spcantwell 05-27-2003, 12:21 PM i have worked for a 5 star restaraunt and we always steamed shellfish. it gives it a much firmer texture. use only enough water that will not dry up before its done cooking and add 2 tablespoons of white vinigar to the water. it really helps bring out the flavor of the lobster, shrimp or crab. a 1 1/2 pound lobster usually took 10 to 15 minutes to cook fully, depending upon the molting stage of the shell. Jimbo 05-27-2003, 12:36 PM I agree with Good N You. I was a longtime boiler, but tried steaming recently and I think it tastes just as good and there's not as much liquid to deal with coming out of the shell. I found if the water's already boiling it takes no more than 15 minutes for a 1 3/4 lb lobster. MakoMike 05-27-2003, 01:06 PM Guys, Its all depends on the size of the lobster! You ain't gonna cook a 25 pounder the same amount of time as you cook a chix! Steve K 05-28-2003, 09:19 AM I have to agree that a lobster is done when the antennas pull off easily. Also, steaming is the way to go. It tastes better and there is no water in the lobster, which makes it a lot less messy. Just ask Jasper White, the authority on lobster cooking. RickBomba 05-28-2003, 11:34 AM That old man Jasper's a buddy of mine, Me him and Chris S. put the hurtin on a bottle of Chris's homemade absolut habanero vodka (not available in stores) one night. He didn't say anything about lobstas though. Except for he wants to touch and lick them all??? It's dangerous to drink with them man, Jasper's a giant and boy oh boy does he fire them down!!!!!! Had to call a cab to get home. He's a lot o' fun though, Stevie too. Later, Rick STEVE IN MASS 05-28-2003, 12:54 PM Lose the lobster....BLOOCRABS, BABY!!!!!!!! Raven 05-28-2003, 03:27 PM heh heh heh Raven 05-28-2003, 03:28 PM til there done of course!:D lobsterman02649 05-29-2003, 12:12 PM I have over 40 years experience cooking lobster. Time to cook has nothing to do with it because lobsters vary in both size and water content. The best way to judge when they are properly cooked is when the white fat starts coming out of the shell. Also, if you have cooked them to long they will start to smell ( a funny burn't smell even though they are in water. If done properly, the coral (eggs) will have turned bright red. By the way, they will be better if you steam rather than boil. - Same pot, about 1/2" of water and something to keep them off the bottom. Since steam rises, the ones on top will cook first.
