View Full Version : Christmas beers
rphud 12-09-2012, 09:29 AM I am usually deep into Quads at Christmas.
That and the nog from an old family recipe that I have "improved" if you know what I mean.
spence 12-09-2012, 10:07 AM Had the Southern Tier 2XMas last week on tap in Pittsburgh and it was excellent.

The Dad Fisherman 12-09-2012, 01:31 PM Been picking up some different stuff for the holiday. Picked up a Sam Adams Merry Mischief, Firestone Double Jack, and Backlash Declaration IPA......haven't had any of these yet. Going to look for a couple of more to round things out.....and throw in a little single malt for good measure

Saltheart 12-10-2012, 01:18 PM Sams winter ale is usually pretty good.
Best is homebrew with lots of ginger and some nutmeg. With enough ginger there is a distinct medicinal effect . First the ginger feeling sweeps over your body , then the alc kicks in. A nice feeling in total!
The Dad Fisherman 12-10-2012, 01:25 PM Sam's Merry Mischief is a Gingerbread Stout......looking forward to giving that a try

fishbones 12-11-2012, 12:33 PM I also like the Mad Elf. Gotta be careful with it because of the 11% alcohol content. It kind of seaks up on you.

Make a strong dark beer. Say a porter using about 9-10 lb of malt extract. You want a good alc kick to go with the medicinal kick of the ginger.
Add an OZ of dried ginger for 30 minutes of boil. Usually they sell a package of this stuff at the homebrew store and its 1 OZ dried.
Do not add any aroma hops , you want to smell ginger and nutmeg , not hops .
Keep the bittering hops low , say 1 OZ at 30 minutes of a 4 Alpha Acid (or lower) hop. Then 1/2 OZ of a spicy hop like Saaz at 15 minutes of boil. No aroma hops at knockout.
The nutmeg you add at the very end after turning the fire off. Add a lot but you can also grind some fresh into the beer glass just like you would when doing egg nog.
Clogston29 12-12-2012, 04:33 PM i'm thinking mayflower porter and DFH indian brown ale for daytime at the fam's.
west coast imperial ipa for evening at home, unless i can score another good one i haven't tried yet.
rphud 12-15-2012, 06:44 PM Adding Pretty Things Finest Regards to the list. Had some at the Abbey the other night and it was very good indeed.
Bigcat 12-16-2012, 10:26 AM Rouge's Santa's Private Reserve Ale. not a bad winter ale the good thing is it don't taste like grapefruit juice like Sierra and a few others.
Higgie 12-16-2012, 12:46 PM Just brought home a sixer of southern teir 2xmas. Big and spicy. But the 8% abv is really subtle. Girl at the packie have it good reveiw and said its on tap at the bone yard. Might have to make an afternoon trip down there this week

fuzzy is great. It really is an outstanding brewery. Galaxy, trooper, ghandi bot, fuzzy, and elm city are all exceptional beers and about as good as it gets for each style.
