Use a barrel swivel to a short leader of mono or flourocarbon to the hook(snelled is best). I use a 6/0 mustad. I hook the eel in the mouth deep into the throat and out the bottom and cast it out as quick as possible. Ice the eels down in a 2 bucket system so they don't drown or use a block of ice in a half gallon jug or something. Cast out and very slow retrieve.
