OK, It's Friday afternoon, there's snow up to my ears and in the yard,in drives my Newfie [both sides]son in law with a grocery bag.
In he comes tossing stuff around the kitchen.
Next comes a wooden box of salt cod, peeled spuds ,onion and --his secret[can't tell a soul] secret.

Long story short he made the most beautiful fish cakes I've had in a Goats age. Better than hot donuts and that my friends is food for a Goat or a King

Luv them. My grandmother was from Nova Scotia, a Nickerson, believe you got a few in Chatham. She made the best I ever had. Could go for some right now with eggs and backed beans. I'm having an Eggo.

i often wonder about these type of cooking secrets
it's not as if someone will grab it and run...
opening a string of fish cake restaurants next week
or even next year....

never had backed beans...
they make you back up or they back you up :huh:

reminds me of the story of "Jean of Nova Scotia"
she was the mother of two very healthy and strong boys
who often would fight with new to shore fisherman for money
(not allot of entertainment options in those days)
anyways the two boy's both came all battered and Bruised up
ashamed to have both lost their MONEY.... in the fight

so Jean Marched down there and challenged the guy right
in front of all his friends so that he couldn't exactly say no....

well, the story goes that the fight got real nasty and the guy got
pummeled allot worse than her two son's did and looked far worse

She returned back home with both their monies and then some
and forever after was Known as "MEAN Jean..." true story
