I have been hand turning some jumbo needles and the thought crossed my mind to joint them.

My question is around jointing a plug. I notice some builders will put bevels on the sides at the joints or all the way around. What effect does this have on the plugs action or is just for looks?

I like it on the sides. I don't really see the use of it all around other than looks maybe. With it on the sides I would think it allows the joint to have more movement and it allows the angles to hit each other on the flats and not on the edge which will wear the finish off pretty fast I'd say so durability too.
