For this one, usually I say start with unhooking them, then either throw'em back or some prefer to cut them directly on the beach, then throw them back. I think the popular misconception is that the brits use them for fish and chips... Not so true... You're much better off with skate...this I ahve a recipe for and if they're fresh, they're not that bad. They're weird...most fish you cook get tougher the longer you cook them. Skate is the opposite. Squid is the only other sea creature that is like this. If you want me to get more in depth, look for me in that lovely BM outfit that's on WW's avatar.
