The onions are the easiest part to make. Sliced red onions and a half dozed jalepenos seeded and sliced. Boil 2 cups of seasoned rice vinegar with 3 tablespoons of fresh squeezed lime juice and a tablespoon of salt. Once it comes to a boil pour it over the onions. Let cool and put in the fridge for an hour. I put them in mason jars and either snack on them or put them on the side depending what's for dinner. So simple but so good.

That's a beautifulk looking spot for a get together. I doubt there's a beach in Connecticut that would allow a charcoal grill. Spot looks perfect for what you guys did.
