Mmmmmm corner beef (one of the best ones I have ever made by the way) and cabbage....check! Watched the Holyoke parade on the tube...check! Only thing is washed it down with chianti instead of beer. Must be changing my ways as I get older! HAHA

Well I married the oldest of nine.Yes she's Irish.
Not only is the fridge half full of salt meat but between the daughters invitations and Sweeties cooking I'll be able to swim on top of the water this summer from all the salt.
PS I'm loving it though

Spent the weekend ice fishing in NH, came home to a heaping bowl (not a plate) of "boiled dinner heaven" and a pint of Guiness.

For me it's because I have never made it myself. And it's usually never on the menu at the resturaunts we go to. I should give it a shot one day. It's so good

With the nickname "the corned beef inspector" you certainly should give making it a try one day.

What channel was the parade on? We were at my Mom's (St. Paddy's day is also her birthday!) and she really wanted to watch it. Only parade we could find was the Hartford one. I expected it to be on 22 or 40. Maybe we were looking too late?

hmm....I think it was on the PBS station (WGBY). they do replay stuff maybe you could still catch it

Thanks Jenn. No cable, she's got DISH. I'll keep an eye out for a replay.

That's because most people don't plan ahead.

I currently have 6 briskets in the freezer.
I ususaly get 12, enough for one a month meals.
We don't always do the boiled dinner, but corned beef sandwiches.

Damn, now I'm getting hungry for a boiled dinner, and it's a meatless Friday in Lent!!!!

If you want more proof why I plan ahead, check out the price of corned beef/beef brisket on any week of the year EXCEPT the week before St Patrick's and see what the price per lb. is compared to that one week.

It will cost almost double, if not more if you want flat cut instead of point cut brisket.

My bottom line is: If you have room in the freezer, you can get enough for the whole year, and only have to pick up the veggies to go with it.
