What is the easiest way to filet a fish striper/blue to get the filet with no bones?

My experience is, you need a good flexible (and SHARP AS HELL) filet knife... thin blade....

Just roll the filet back tight and work the blade slowly along the ribcage/spine and it'll all come right off clean...

Here's a link to another website where they have pictures and instructions. I'm pretty sure the technique for stripers or blues would be pretty much the same as cod, however you don't have the "horizontal bone" as he calls it. The flounder one is worth reviewing, too. That's a whole different technique.
