once you have tried a fried turkey, you can never go back to baked! i strted frying them about 10 years ago. now i have family and friends lineing up for it. it is the most amazing way to eat turkey. i usually do two per holiday, one plain and one marinated with some cajun style seasonings. it is also much faster to cook than baking at only 3 minutes per pound plus 5 minutes.

one word of caution to any one attempting it for the first time, have a fire extinguisher at the ready and do NOT do it alone. one of the first times i tried it, while still in the learning stages, i had too much oil in the pot. when i dropped the turkey in, the oil over flowed and started a bit of a fire and splashed 350 degree peanut oil everywhere.

Yeah I was watching this on Emeril and he put it in the pot very slowly.
