I dont know where this belongs but
Im Looking for a fish chowda recipe you know a real thick one creamy with onion potatos any ideas those little oyster crackers Hmmm Hmmm Good !! Need right away for tonight to watch game on big screen and nice fireplace e-mail me Michael@msmexec.com or post it here Thank You.

1 Tablespoon or so of vegetable or if you like olive oil(to cook vegetables)
1/2-2/3 cup chopped onion 2 celery stalks, diced 2 cloves garlic minced 4 cups milk 1 cup potatoes, peeled and diced 2 cups butternut squash, peeled and diced 1 bay leaf 1 - 1-1/4 lbs fish fillet cut in 3/4 inch pieces 1/2 teaspoon fresh thyme 1/2 teaspoon dried marjoram salt and ground white pepper to taste I take half the potatoes and squash and boil them untill soft then mash them and set aside I cook the onion, celery and garlic with the oil just untill it's translucent stirring often not to burn cause it will change the flavor. then i add the 3 cups of milk 1/2 the potatoes and 1/2 the squash along with the bay leaf.. simmer for about 8 minutes then add the mashed potatoes and squash.. cook for the rest of the 7 minutes or so. then add the fish, thyme, marjoram, salt and pepper. when the fish is just about cooked thru i shut the heat off and let it sit for a bit (like 5-10 minutes) check the fish.. you don't want rubber.. I don't add all the pepper right away.. my cousin adds paprika at the end.. i don't like the taste.. i add a little more pepper to my bowl... just becareful as so you don't make it too thick.. if you want it thicker i just add a little instant potato.. i don't like to use flour.. as it clumps... |

my dad's recipe
1 1/2 lbs bass cut in 1 in cubes 1/2 cup of matchstick carrots 1/2 cup chopped onion 1/2 cup chopped celery 1/4 cup flour 4 tbsp buttah punch of salt pinch of paprika 3 cups milk 20 oz chicken broth 3 pcs bacon 4 red bliss potatos peeled, cubed and blanched grated processed romano to sprinkle on top over medium heat melt butter, add onion, carrots and celery and cook till see thru. mix flour salt and paprika together, add into vegetables, stir constantly for 1 minute. add milk and broth, cook ten minutes stirring constantly. add fish and potatos and crumble bacon, cook for another 15 minutes. garnish with cheese faaaantastic-just don't let it boil!! |
