Clean em quick, cut out the brown strip and use them for fish chowder. Makes a very nice dish. Combine that with the fun of the catch and I'm all for them.

dutch39 05-06-2004 09:03 PM

Hey Fish On,

Iv'e tried Blue fish several ways. Smoked was the only way that I liked and just a little of that went a long way.
I would try the chowder if you would share your recipe.
I like chowder. Do you do anything special to the blue fish?

Yeah, I remember this last year. Everybody was like, Oh Blues are fun. They fight great! Then come mid-June everybody will be singing the Blues Blues again.

Fish On 05-07-2004 08:14 AM

Hope folks don't feel this is too much of a segway, but here goes. I'd be happy to share the recipe. By the way this is Mom's.

Fry 5 pieces of bacon; crisp but not burnt.
Drain on a paper towel.
Pour bacon fat through paper towel-on-a-strainer into a large pan.
Add 1 onion and 3 celery stalks chopped.
Saute til partially cooked.
Add 1 cup water 2 cups milk 5 diced potatoes and 1/2 green pepper.
Add 1 bag frozen corn (I added this because I like corn in my chowder, mom said it was ok with her).
Salt, Pepper, Mrs Dash to taste.
Add crumbled bacon.
Simmer, not boil 15 minutes until potatoes are partially cooked.
Cut fish into 1" chunks (works for any whitefish as well as Bluefish).
Blend 2 (more) cups of milk with 1-1/2 tablespoons of flour.
Add to pan along with fish chunks and simmer until fish is cooked.
It does not take long for fish to cook (maybe 10 minutes).
Don't go too long as fish will get mushy, be sure to simmer not boil.

Enjoy with stories of how the bluefish were caught!

Notaro 05-07-2004 11:21 AM

BasicPatrick, I recalled the spring run last May. Blues were frenzy and non-stop in Poppy flats.

dutch39 05-07-2004 01:53 PM

Thanks

Fish On
