Anyone have a good recipe for bonito? Cook it the same as other tuna's?? People have said it's pretty good so I was just curious.

It's pretty good grilled plain or with some marinade. If you don't finish it, it's great as "bonito salad" cold. Mix with some mayo and whatever other garnished you'd use in your tuna salad.

Just make sure you're grilling a bonito:drool: and not a false albacore :yak:

Pink meat=bonito

Blood red mess=albie

Gotcha, I think I have a pretty good handle on what is what from looking at pics on the web, but that's one of the best, most descriptive ways yet to tell them apart. Thanks.

Katsuo is fantastic. Quickly sear the outside but leave the inside raw. Create a sauce of soy sauce and grated garlic with green onions. Delicious. I used to eat that dish in Japan.

Bonito is a really tasty fish. I almost never release them. I've grilled it with nothing but lemon pepper and some olive oil and had people say it was the best fish they ever had.

Just don't overcook it, and probably it will taste good no matter what you do to it. :D

One easy way to tell the difference when they're still alive, and an albie can be released if it hasn't fought to the death, is that bonito, like their cousins the wahoo and king mack, have sharp teeth. Albies don't.

Straight lines on the back=bonito

Wavy lines on the back=albie

Albies have two or three black marks that look like fingerprints behind the pectoral fins, too. Short high front dorsal fin, whereas a bone has a lower and longer one.

After you catch a few it'll be a snap.

Blues vs albies? Easy---blues are actually edible :D
