What are you guys cooking for the Holiday?
I know it's only Tuesday, but I was wondering what some of you might be whipping up for a Holiday cookout? I don't care what the weather is..I'm ready to start Summer....I'm thinking ribs...maybe deep frying a turkey...maybe a clamboil....not sure yet...any ideas guys? :drool: :drool: :gu:

Ya read my mind, I was just pondering this very topic. Just did the smoked pulled pork with NC bbq sauce and cole slaw last weekend, so this weekend I thought use the seafood steamer for a backyard bake. Also use that last striper filet on the grill with a new twist I saw on TFN. And of course burgers, steaks or dogs for those turds who never try anything new and say, "Ewwww I hate fish." Biggest problem is going to just be getting to the weekend!

I saw this recipe on BBQ U a couple of weeks ago and tried it....Unbeleivably good
Smoked Bratwurst. You slow smoke them on a smoker for about 45-60 minutes w/ hickory chips until they get this dark rich brown color. While they are smoking you skewer up some onions, in slices, and peppers and then grill them separately. After the chips have burned off you put an aluminum lasagna pan that has 3 cans of your favorite suds in it and 1/2 to 3/4 stick of butter and then put in the Onions and Peppers that you grilled Then put the pan in the smoker next to the Brats to warm up. When the Brats are done you stick them in the pan of brew and let them sit for about 1/2 hour to absorb the flavors. Serve them on nice french or grinder rolls w/ a nice grainy german mustard, some onion and peppers from the pan and top it all off w/ some nice fresh Saurkraut.......MMMMmm Heavenly, :drool: :drool: they have that nice skin snap when you bite into them and are juicy as hell. Then wash them down w/ a nice Frosty Beverage :cheers: |

Seriously though. I think I'll smoke up some pork and cook up some fresh striper fillets. Maybe a huge rack of ribs as well. Crap I'm hungry now just thinking about it. |
I'm doing some spare ribs. Stop and shop has some on sale right now for almost half price.

any special method salty?
that you use....too cook ribs?....a friend of mine....used to boil them for like 10 minutes til hot then drop them in a special sauce....to saute' ....then he'd broil them. they came out excellent .....

The trick seems to be to cook them slow. I like to sprimkle Monteeal steak seasoning on them while grilling then when almost done , some barbecue sauce. You don't want to cook them too hot and fast cause they;ll dry out and get stringy.
