Cleaning and cooking SBFT?
Got my first tuna this morning, and wasn't quite sure how to fillet it or steak it. My buddy actually did the knife work, seems there are a horizontal set of bones from the spine, so he kind of "quartered" it. Worked out pretty well, man that meat is like butter. Are there any tricks to this? To steak it, do you just gut and slice away?

Soy sauce with some honey and sesame seeds is pretty good.
Being as fresh as it is you almost can't do anything wrong. |

just had tuna for dinner-
heres what i did for those needing a recipe.. get some soba noodles and make a sesame/peanut noodledish with steamed broccoli, sauteed onions, peppers & garlic.. bread tuna steaks with panko crumbs & pan fry in really hot EVO until the sides are browned, no longer.. serve over noodles & veggies & drizzle a little tong au toi vietnamese hot sauce over it..
