Fried Silversides Anyone???

I grabbed an adult silverside off the beach last night, and thought about how perfect they would be to make a classic french dish called "friture". Usually it's made with whitebait or smelt.

Basically you squeeze the guts out the vent, dust in seasoned flour, fry until golden brown and dress with a little lemon, garlic and parsley. I've never made it, but it sounds like just the ticket for a halftime app on football sunday :bl:

I assume you can eat these little guys, and something like this is probably an old yankee staple?

I'd bet you that fried, they taste a lot like smelt ;)

They are Excellant....................

Fish_Eye 10-03-2005 07:13 PM

Stripers don't eat them because they taste bad.

I've had a number of silverside feasts at my house. No need to deal with the guts as long as they're a couple of hours old...just fry em' up in very hot oil and salt and pepper to taste. If you like smelts you'll go nuts over spearing.

I recommend washing them down with blueberry ale. Bass ale works fine in a pinch.

Fried smelt are one of the best appetizers I ever tasted. So if silversides are even better, ive got to try this. They certainly look clean enough .

Clammer,

Take a couple of pictures and then turn them in. There is a limit and I believe it's only a quart or so a person. Lock em' up!

You've got the right recipe, though I can't translate "silverside" in French...
Dust in flour, fry in a pan with oil, lemon...
Basically that's it !
