how do you determine where to put the stripper guide on a spinner?

You will have to static deflect and test cast to determine that. A good starting point is about 32-35" on surf rods.

A good starting is put your reel in place then tape the line coming off the spool at its hightest point, then run the line through the guides to the tip,,aline each guide so that the line is just touching the top of each guide ring, to the highest point of the spool. Load the rod and make adjustments from there.

I've started using the new guide concept as a basis for locating the stripper. I \ use a guide with the appropriate size ring and use different heights to get the stripper about where I would like it. I still test cast and do static deflection to make sure it all works out well. Seems to be a pretty straight forward way to do it.
