PERCH, the other white meat

for about a wk now i've been living on yellow perch filets and smelt.... deep fried brown and chrispy. there unreal . if you have never tried them you are missing out on the best tasting little delicasy on earth (imo) i used a otw dave marsh recipe but oil was at 375# and cooked 1min longer ..... only thing is a little extra weight this wk ..... ice fishing last wk was good for me w/ smelt in maine, about3/4 of a 5gal pail and the cow perch around home on the perch ponds .....we caught about 80 yellows on sat. but trout fishing sucked wind on sunday..the perch was the best.fish up to 15 inchs and about 20 over a ft long .. only about ten fish under 9 inchs...fishing was hot untill about 10am w/ jigs and tilts popping ... i will post pic ...i hope..

I love perch caught through the ice. Yellow perch breaded and pan fried in butter. Oh yeah! Best fish I ever had (fresh , grilled tuna a close second) .

Trouble is you need a lot of perch because they are usually so small.

and they are a true delicacy;

however, i'd rate fresh Dover sole and
Sand Dabs, cooked the same way,

right up there with panfried perch~~~~~~~
ALL are verrrry tasty and when topped with
brown butter, citrus of choice, and fresh herbs,,,,,,,,,

impossible to BEAT!!! congrats on a fruitful winter!

Yeah I was impressed with your prowess on catching trout thru the ice last week, sh!t you couldn't even catch a perch there. Perch fishing is easy, like live herring or menhaden, that's why it is soooo appealing to you.

On a tough pond you couldn't hold my bait bucket.

Oh yeah, and trying to teach a perch fisherman how to ice fish for trout would be equivalent to giving a monkey a diploma.:agree:

I grew up on Lake Ontario...fish fries with smallmouth bass, perch and walleye. Deep fried in a beer batter...add some salt and lemon....mmmm-mmmm-mmmmmmm.

stiff tip 01-27-2009 05:45 PM

steve ....we left the ice today .10 guys w/ tilts and jigger sticks we caught over 100 lbs of yellows and 20 lbs of whites also 10 lbs of 1lb slab gills lots on the jig ...fish were up to 15 inchs and whites up to 14 inchs . bass to 5lbs and picks to 26inchs ...we fished with small trout from hoxie pond for the pike....pic will follow ..........what about tomorrow ????

Fish_Eye 01-27-2009 07:05 PM

I've yet to eat a sweeter fish than a perch through the ice...I agree with you all, hands down, yellow perch through the ice is hard to beat.

Got to work, unfortunately. You have to leave that pond alone for a while, you'll fish it out.

Saturday I am going to fish with 2na and Saltfly chasing tilts and jigging in eastham for perch, pickerel, smallmouths and whiteys!

You should go east with us, maybe Depot as well. You'll find me near the herring run and white cedar.

How is the ice on the outer cape? I'm going next weekend it would be nice to get the canoe out.

I have stayed away from freshwater fish due to heavy metals, parasites and the like, but I had to try it and was pleasantly suprised. Yum. Yum.

The charles river is filled with yellow perch, some almost a foot a long. Its to bad there is a fish consumption advisory otherwise I'd have some in the deep fryer right now.

Ditto on that, only takes a few seconds longer to have 2 nice fillets. Taste way better when both side of the fillet are coated and deep fried. I got to get back out this Sat and jig myself up some. Those are some impressive numbers and sizes you guys are taken.
