i had a friend/neighbor who could cut that fast
he once got me a job unloading scallops
on the newbedford docks..........

he noticed a purple vein going up my arm
and then grabs me saying you have fish poisoning!
Craig....and i recounted how i got stabbed by a striper fin

i got rushed to the doctor for shots
he saved my life!
a day later and it would have reached my heart
and most likely killed me.

thanks, I'll be sure to bring my knives next time I fish with him! It takes me @ 20 mins per fish!

I'm not that fast by anymeans, but most of the racks are pretty transparent.....

I find the biggest trick to fileting is a good knife that is REAL sharp.

I have all the time in the world and leave no meat on the bone is my motto..... He's not cutting any fluke strips for fishing. Pretty impressive say the least!!!

Razor sharp knife helps a lot and not being exhausted from fishing all day helps too. Very impressive.

and having a very large surface that is very stable and made for the job. standing up straight, etc...

not saying I could ever cut this fast, even in a cutting room, but it helps the fast become faster for sure....
