Buzz.. This might be true. I saw skate at the store yesterday and it got me thinking about them. Next time I see it, I will buy it and see if I can't do it justice. I hear it tastes a lot like scallops.

We tried to sell it in an Italian fine dining place at the Cape in 1995. Couldn't move it. It really does taste good. The only fish that gets more tender the more that you cook it.
The only hard part is getting the skin off the wings. It's an acquired talent.

The place that I found them yesterday had skinned them. I saw them, then saw the sea scallops and went with the scallops... Next time I will buy the skate.

Skate wings are up around 1.80 a pound to the boat, that's better than pollack most times

Nebe, skate is delicious if handled right and cleaned the right way.

It gets a bad wrap for al the dealers that tried to pass it off as real scallops.

Lots of ways to cook it.

The other fish that is absolutely delicious is sea robin.

When I worked in montauk we would get giant ones, the meat is so tasty and had a great texture.

Growing up we'd always cut the wings off and bring'um home, even buy them fresh off the boat at sakonnet pt for cheap money. They where prepared like any other fish...crunchy cartilage makes them uniquely delicious. You figure... years from now the majority of the population will realize that the poor man scrap's(also know as lobster bait) are just as good , just not as fun to catch

poor mans scallop.. grind out a 2"pipe inside and out till it will cut both ways. skin skate. pound the pipe on the skate wings. eurika, instant scallops.
