I brine them as well, but I don't put them in the freezer. I used to freeze them straight up, but I have listened to the message to keep bait out of the freezer as much as possible. Sleep deprived me placing slimy rigged eels in the freezer at 5 am inevitably leads to the freezer stinking and an annoyed wife. Now I just store them in a container of brine stored on my bench in the basement. They last a season no problem, but definitely not more than that. Probably would last longer brined in the freezer. Anyway... I also find that some eels get leathery and dry in the brine, others don't. I just soak the leathery ones in a bit of water before heading out and they seem to soften right up.
