Nice post! Just caught a batch of bluefish yesterday to experiment and try smoking them. Was just going to look around for a reciepe when I say your post!
What is the best size bluefish to smoke? Do you try to smoke the small/mid size and leave the larger ones? I think the larger they get the fishier they get.
