Schoolie - I usually mix up some mayo, good mustard, a little white wine, some fresh garlic, some worctershire (never can spell that!) sauce, maybe a tad on soy, some tarragon. Paint the fish both sides and let it set about an hour. Then put it on the grill or in the oven.

Also do the onion, lemon, tomato, butter, tin foil thing.
