I would say for an off the shelf, quick finish coat it will probably haunt you. Air (clean air as in good airflow in the drying room/box) is key.
Also, Possibly coating them with a spray shellac after will cover up the Waterlox and eliminate the odor.
I haven't come across a better waterproof sealant for furniture, ever. NO water stains, EVER !
I'll get you some sample packs of the new stuff. I haven't got it yet but will soon....
