I don't think it is unprofessional to ask for a glass of water if you didn't have your own. people expect you to be a little nervous in an interview. I think the people giving the interview want to feel a sense of authority and that only strengthens it for them seeing you being a little nervous there in front of them but it also shows that you are confident being in the interview as well.
