It's hard to find a 3-wheeler with multi-speed gears. And, they're more wind resistant than a 2-wheeler. I wouldn't want to pedal one from, say, the fishing pier to the Cribbin against a honking SW wind, which you get 7 days out of 8 in the summer. Plus, there are some subtle hills on the service road between the Sag and the east end---you'll notice them if you're pedaling a one speed bike.
Get a woman's style mountain bike. As Chris said, it's easier to swing your leg thru the low frame in front than over the back when you have a rod or two in the carriers.
