Nail 'em to a board. cut (girdle) them around the neck and with a pair of pliers pull off the skin. Not as hard as you think. Now you can use them blue side out.
Its a good way to "recycle" spent eels. Plus, at the end of the year just leave em in kosher salt in a tupperware container in the freezer and they are ready for the nexyt year.
