As far as hot sauces go, my favorite that I don't make is East Armageddon Hot Sauce. It truly feels like the world is ending in your mouth, right after a half second burst of enormous flavor. My latest 2 batches are a roasted veg, using jalapenos, carrots, onions, fresh tomatos and garlic. Aged it for a year. Very mellow heat. Long flavor. The other was a straight up smoked habanero. Holy Hell Hot Sauce. Yipes! Favorite spice for the last couple weeks is cardamom. Been doin a bunch of indian inspired stuff. Even goes great in fresh bread.
