Click tools-> out of office assistant -> type in your message. check the I am currently out of the office radio button, message and it will auto respond with whatever message you put in.
If you will not have internet or access to the mail system period. I like to state that I will not be reviewing messages from 12/01/2006-01/14/2007 as an example, and leave a contact number just in case, that way folks take the number down and give you a ring if its really that important.
