Mackeral will work fine. So will pollack (in your neck of the woods).
Eeels are not that difficult to work with. Use a rag to grab them, and hook them through both lips......all you need to do is make sure to keep them out of the rocks, and make sure they do not wind around your line -- and you'll be fine.
I usually do a slow retrieve when I live-line anything from the shore to insure nothing hides beneath rocks on me....good luck.
