Best way I've found to keep them as the others mentioned is a large minnow type bucket with holes in the bottom of the inner bucket. I place the eels with seaweed in the section of bucket with holes, load up a five gallon pail with ice on the bottom, then drop the eel bucket on top of the ice. This way the ice slows down their metabolism and make them easy to grab with a rag. The seaweed keeps the moist and fresh. And the ice never comes in contact with the eels. Works good for me.
