Way cool!

Going back to about 20 yrs ago, a fellow biologist who had done an internship in Hawaii told me that they were looking to farm tilapia. They were nuisance fish that would over run prawn farms. The goal was to sell the meat to the US. Guess it worked out better than they had planned.

About 4 yrs ago I remembering watching some short tv blurb where they were raising Tilapia in shallow pools and the fish would grown to about 2.2 lbs in a yr and that that they didn't need to feed the fish. The green growth on the side of the tanks/pool were enough to sustain the fish. How incredible is that! Money return on them were decent.

Tilapia is a firm white fish - not the greatest flavor or texture, but it plenty edible. I end up breading and baking it most of the time or sometimes it goes into the steam oven (ginger & garlic slices then topped with some light soy sauce and hot oil).

Lots of people toss their fish racks. I save all of them for fish stock (except for bluefish). Plenty of meat left on the bones as well that you can flake off and make fish tacos. We grew up not wasting anything. I skatter the bones out in the yard for the garden. Same goes for the shells to mussles & steamers.
