Here is my suggestion to you. If you have the time take the ferry to Maui and then the other ferry to Molokai (not sure if there is a direct from Kauai to Molokai. There is a captain that is seriously one of the nicest, most pleasant human beings on this planet. His name is Captain Clay Ching. Here is his website

If you are serious about doing it, you can call him and ask him to take you top water plugging for some HUGE GT's!!! He caught a 120lb GT on a popper while recording for a Hawaiian fishing television show. He doesn't advertise it because he feels that the average person is not a skilled enough angler to fish for GT's. But he will take you if you request it.
The day I went, there were huge swells because of the hurricane that was approaching the big island (we were taking 12ft waves on the ferry while sailing back to Maui...people were throwing up and crying. I thought I was Alaskan crab fishing). The conditions weren't great for plugging (constant rollers on and around the reef where the GT's hang out) as it was hard to keep balance but I did hook 2 fish and got one to the boat that was approx 50lbs. before it became unbuttoned. What a fight, what awesome fish, and what a great captain. My wife was with me also and she wasn't feeling too well due to a feminine issue. To try to make her feel better and cheer her up Capt Clay took us to go find some giant sea turtles because my wife loves them. We found some big ole turtles that put a big smile on my wifes face. I would recommend this guy to anyone, unfortunately he lives on Molokai, but if you wanted a once in a lifetime fishing experiance I would recommend Capt. Clay.
