granite is pourous and requires sealing and some other special care, but looks so much better than solid surface IMO. plus its cheaper. i don't know if i'd trust 1" though unless it is supported really well. 1.75" is over 5x stronger in terms of bending strength. If you want a good sized sink i would think that the 1" might cause some problems for you. Another cheaper option is granite tiles.

did you check Rosy's. price was a bit lower than other places and they did a nice job at my house. i'm still working on refinishing the cabinets myself (strip, sand, fill and paint). their demo and removal costs were significantly better than anyone else that I talked to.
