My favorite marinate for tuna and swordfish is very simple:
equal parts white wine (any) and teryaki sauce, liberal amounts of fresh garlic and fresh ground ginger. Marinate for 15 minutes per side and baste with marinate while grilling. Be sure not to over cook.
