You're confusing "tone" with "pitch"...a "note" is the written form of "pitch".

If you play the same "note" on two different guitars they will have the same "pitch" assuming they're both in tune, but likely will sound different as the instruments produce their own "tone" based on the type and qualities of the individual instrument.

Someone so proficient at the guitar should know such things.
