Cooking Time For Lobster

I have over 40 years experience cooking lobster. Time to cook has nothing to do with it because lobsters vary in both size and water content. The best way to judge when they are properly cooked is when the white fat starts coming out of the shell. Also, if you have cooked them to long they will start to smell ( a funny burn't smell even though they are in water. If done properly, the coral (eggs) will have turned bright red.

By the way, they will be better if you steam rather than boil. - Same pot, about 1/2" of water and something to keep them off the bottom. Since steam rises, the ones on top will cook first.
