Many years ago (approx 30) one of the Chesapeake bay states had a spring striped bass size limit of 13-15" commercial.
That size was taken so that the N.Y. restaurants could have -two dinner plates off each fish.
That was about the time that Massachusetts had a 16" size limit. Trouble was that the market was flooded with Chesapeake fish by the time that Massachusetts fish arrived.
Since that time strippers have been raised like trout for the food market.
Maybe someone like Legal sea foods could fill in the blanks.
