oh sure
green tomatoes are quite easy to ripen
the cut apple inside a brown paper bag trick (which allows them to breathe)
gives off ethlyne gas, the same gas commercial growers
use to ripen all commercial tomato's
SO...no need to pickle them.... you can even freeze some but
those you typically only use in stews or pasta dishes .
as for covering them.... thats usually a lost cause unless you use
walls of water.... but those are not huge, and usually are used for smaller plants
