Agree with the Taco comment - I use Striper and Hake in tacos and they come out great. Fresh salsa is the key for me. In Hawaii everything was Mahi Mahi and was covered in macadamia nuts, not to say you have to go that way. I would flour and pan fry, its got a nice texture. Add whatever you want to pan when your done for a quick sauce - lotsa butter, lemons & capers, or Kalamata olives and hot pepper flakes with some diced tomatoes is another way I finish off fish and its really good.
