It's not as complex as it looks, a lot of repeat ingredients.
I've done the hot sauce two ways. Either char the hell out of a whole pineapple then peel and put the fruit into the pot...or peel and grill slices with a little canola to get a good sear.
Substitute mango if you can't get pineapple pulp. Some stores have it frozen in chunk form or with the frozen juice.
The hot sauce is awesome. I use it on my scallop grilled pizza
