You are better off using rise and run. Raising the pitch from 1 in 48 to 2 in 48 (twice the pitch) just changes the angle by about a degree. I doubt you can measure an angle difference that low accurately but you can certainly tell the difference between 1 inch in 48 and 2 inches in 48.

In plumbing the pitch has to be controlled so you know what size pipe for what length of run to prevent siphoning the traps. On your boat I think you can do whatever you want within reason.
