Last of the steaks from this fish!
Tried blackened and cast iron skillet...the skillet definitely helps keep my steaks seared and RARE but the jury is still out on the blackened seasoning. Making our own mix from ingredients let us not add any cayenne pepper...I would not have survived!
The small, well done steak is my wife's, she doesn't want to see any red....
