I will eat them all day long.

Most people aren't a fan of them cooked, but sashimi/sushi style they are pretty good, if you like tuna.

First, bleed and gut asap and put the fish on ice.

filet and trim all the dark meat (fat).

Slice thin, arrange on a plate with fresh squeezed lemon and lime juice. Let sit in freezer for about 15 minutes.

Eat like any other sashimi - w/ soy sauce, wasabi and pickled ginger.

You can also use the albie as a substitute for tuna in spicy tuna rolls.

Take some mayo and Sriracha hot sauce and mix with albie meat. Take mixture and put on seaweed and rice. This is my favorite - asian albie burgers.
