Christmas beers

I am usually deep into Quads at Christmas.

That and the nog from an old family recipe that I have "improved" if you know what I mean.

Been picking up some different stuff for the holiday. Picked up a Sam Adams Merry Mischief, Firestone Double Jack, and Backlash Declaration IPA......haven't had any of these yet. Going to look for a couple of more to round things out.....and throw in a little single malt for good measure

Sams winter ale is usually pretty good.

Best is homebrew with lots of ginger and some nutmeg. With enough ginger there is a distinct medicinal effect . First the ginger feeling sweeps over your body , then the alc kicks in. A nice feeling in total!

I also like the Mad Elf. Gotta be careful with it because of the 11% alcohol content. It kind of seaks up on you.

Make a strong dark beer. Say a porter using about 9-10 lb of malt extract. You want a good alc kick to go with the medicinal kick of the ginger.

Add an OZ of dried ginger for 30 minutes of boil. Usually they sell a package of this stuff at the homebrew store and its 1 OZ dried.

Do not add any aroma hops , you want to smell ginger and nutmeg , not hops .

Keep the bittering hops low , say 1 OZ at 30 minutes of a 4 Alpha Acid (or lower) hop. Then 1/2 OZ of a spicy hop like Saaz at 15 minutes of boil. No aroma hops at knockout.

The nutmeg you add at the very end after turning the fire off. Add a lot but you can also grind some fresh into the beer glass just like you would when doing egg nog.
