I put the hook and eel on a #6 duolock clip. The hook is left free ( attached to small on end of the duolock) and pointing up. The clip is easier on the eel.

I use a duolock #6 I attach the eel to the big side and the hook to the small side. the Duolock keeps the eel healthy and the hook exposed ( turned upwards)

Seems like a lot of work when I have cought the majority of my bass on close to dead if not dead eels. I like the 7/0 gami live bait, the regualr ones not the HD.
